Pasta with nettles and raisins - Vegan recipe

I love experimenting and I invented at least ten thousand recipes.
This is one of them that I made last night.
A recipe to die for.
The combination of tastes and aromas are irresistible.
Easy, fast, budget-friendly, nutritious, healthy and delicious.

It makes a great lunch or dinner, even if you are on a diet.
As it can be served hot or cold, you can have it at work (school) at the picnic and to a party. 

Have you ever cooked and eaten nettles? 
They are so easy to cook with, so healthy and so delicious.
They are also quite versatile, you can make loads of recipes with it. 


As soon as the spring comes, the nettles can be found everywhere and they are free.

Just take precautions when you gather them - use thick kitchen gloves. They sting, sometimes a lot, sometimes just a little depending on the period you find them.

However, homoeopaths sustain that the stinging helps to cure rheumatism. I want to believe them so I don't use gloves when I manage them.
It hurts quite a lot when and after you touched them. It could take up to 8 hours for the pain to go away. It's quite uncomfortable especially if you wash your hands (or the parts that the nettles touched you) with hot water.
Stay away from it.

Ingredients

  • 400 g pasta of your choice. It can be small or long shaped pasta. It really doesn't matter. I used fusilli in this case
  • a handful of fresh nettles - 50 g more and less
  • 1 yellow onion
  • 1 clove of garlic or a 1/2 teaspoon of dried garlic
  • 1 spoon of coriander seeds - dust is not good, same goes for the leaves, they have a different taste that doesn't go well with everything 
  • 1/2 spoon of raisins - possibly golden, but any type will do 
  • 4 spoons of olive oil - or any other oil you fancy
  • a pinch of salt

Method of preparation

  • Boil the pasta for 5-7 minutes as indicated on the pack. I like it al dente.
  • In the meanwhile, peel the onion, wash it and mince it. 
  • If you add a clove of garlic, peel it and mince it. If you add dust or dehydrated garlic, you will add it at the very end. 
  • Wash the nettles, dice or mince them.
  • Heat a frying pan, no oil, add the coriander seeds. Fry them over medium heat, stirring constantly to release the aroma. Now you can choose to let them in, or take them out and add them later in the cooking process, or at the very end.  I added them later. 
  • Put the oil in the frying pan, add the minced onion (garlic), leave it for a minute over medium heat. 
  • Add the nettles, stir and fry for 2-3 minutes over medium heat. 

  • Add the raisins. 

  • Drain the pasta and put it in the frying pan. Stir. Let it fry for 3-4 minutes. Stir from time to time. 
  • Add the coriander seeds and serve hot or cold.
